I guess it depend on how you are planning on cooking things (on a fire grate, Colman stove, on a stick, power of prayer...etc) we have one of the those adjustable fire pit tripod grates that works for most anything.
The key is preperation, I like to marinate meat in ziplock bags and toss it in the freezer a couple days beforehand, depending on what day I plan on using it. A great "all in one" healthy camping meal is shish kabob.
We also have the square sandwitch irons, you put buttered bread and fixin's into them close and set them in the fire (fixins like ham and cheddar, turkey and swiss, pizza sauce/pepperoni/cheese)
Roasted corn is great if you have a fire grate, just soak unshucked ears in water for at least and hour then roast them till they are semi burned over most of the outside, shuck and eat.
