I have two of the 8.5 pans (Professional) along with a bunch of other Calphalon Professional I've owned for years. It's wonderful stuff. Note that Calphalon now comes in several grades: Commercial, Professional, PotsNPans, maybe others. Having said that, even their least expensive stuff is probably better than typical pans. I have one Commercial non-stick pan (a small one-person omelette), and will probably order the Crepe pan from above, and a 12" non-stick Commercial Omelette (which I use for a saute pan anyway). I wash even the "do-stick" versions by hand. At worst, you just have to let them soak an hour or so to get stuck stuff off, no major scrubbing required. The non-stick type you can usually wipe out with a towel.🙂 The only difference I see between Commercial and Pro is that the Commercial has a cool-touch handle. The Pro stuff has a big bar of metal that tends to get hot (I use gloves). I'm not sure I like the glass lids offered on some models. I have anodized aluminum on mine (bomb proof).
