Calling all you cooks out there, need some ideas for mexican flavored chicken.

I'm fixing dinner for one of my friends tonight and I told her it'd be a mexican theme with chicken. Problem is I dunno how to season chicken nor do I know how to cook it.

What I have:
4 boneless/skinless chicken breast (currently thawing)
chicken broth
mexican rice
1 can campbell's chicken verde soup
1 box pasta-roni chicken quesodila flavored fettechini
very few spices
no lemon juice
a george forman
pots
and no cooking knowledge 🙁

I can go to the store and get a few things if need be, I just need to know what to get.

Any help at all would be awesome, thx. 🙂
 
Go get lemons, asap! Chicken should be fully cooked trhroughout when done, etc. Don't over cook, try to avoid the forman if you can. IME, that thing can make food really dry.

And try to find adobo that doesn't have MSG. Goya adobo doesn't have MSG. Badia does.
 
so i need to go get some lemons and some adobo(what is this?)

ok, now what do I do with them?

how do I cook the chicken?

I also have pans, olive and cooking oils if i need to suate it.

yes I am cooking for someone. No, getting some is not on my mind but she is very special to me so I like to go the extra step. She's been really stressed out this week and her car got nailed yesterday while she was in class, I just want her to be able to relax.

Go to Krogers and pick up pack of Taco or Fajita spices. They have them on sale 3/$1.

Unless you're allergic or something...

I just don't see a reason to add unnecessary and artificial flavor enhancers to my food, regardless of potential side effects. Why does one need to enhance the flavor of something already so flavorful?

Anyway, adobo is an "all-purpose" seasoning. Shake it on the chicken and cook it. I often cook chicken by putting it in a covered pan with like a cup or so of water, some butter and some lemon. This keeps it moist and tender.

After you cook the chicken, you'll probably want to do something with it....enchiladas? tacos? fajitas? So many choices...
