Cajun Food

So the guy I'm working for here is taking me out to dinner tonight after work cause it's my last day working in Texas.

He gave me a couple choices and I picked Cajun. I'll eat just about anything and like spicy food so I figured I'd try it out.

Any recommendations for a first timer?

Gumbo is great, crawfish etouffee or shrimp creole are really good. Those are my favorites.

I love some good Jambalaya, especially if it is loaded with goood Andouille Sausage and lots of crawfish.
That said, Gumbo kicks ass too!!!

Creole food is farkin awesome.

Any kind of shrimp or crawfish is good but messy and you gotta shell/peel them
ribs
catfish served 10 different ways

Antoher vote for crawfish etouffee - fried crawfish tails are tasty too.

Edit: And don't forget the dirty rice.

Crawfish are still in season (just barely) so anything made authentic should have Gulf Cost mud bugs, instead of the frozen Chinese version (too soggy and no taste).

Cajun and creole are two different things, by the way. If they have gator tots, go ahead and try them (fried pieces of gator).

southeast texas is full of cajuns. and houston has a lot of folk from new orleans still.

I ended up having mixed seafood gumbo, frog legs, and broiled crawfish. Pretty good stuff, but damn that crawfish coating/seasoning really stays on your hands. I could still smell it on my fingers this morning.

etouffee is the absolute best. i made some a couple of months ago and holy hell that stuff is delicious :)

i ate some gumbo @ a casino in Kinder, LA that was fantastic & cheap.

That would be tasty to my mouth right about now.
