You'll want to display a solid red, solid green, solid blue, solid black, and solid white screen, each for long enough to inspect the thing carefully.
This will show you any stuck on or stuck off pixels or subpixels, and the black and white screens will also give you an idea about backlight uniformity.
Your idea for a ghosting check, via either a video or a game is also a good one.
One thing, though. Be realistic. An older 17 inch LCD is unlikely to be perfect, at least with respect to ghosting. Only pay for what you are getting but, if you are looking for perfection, you had best look elsewhere.
