Butter

Keep it in the fridge or outside in a dish?

I kept my last pound out of the fridge and it was ok, but toward the end it was looking a bit tired.

Uh oh.

Fridge -- I only really use butter for cooking, so I take what I need out of the fridge along with other ingredients...by the time ingredients are prepped, butter is at room temp.

i keep it in the fridge, and when i know i am going to use it and want it soft, i take a pat or two and let them get to room temp. before using them.

Most of the time in the fridge. Sometimes I'll just zap it in the microwave for a really short time if I need it soft.
But sometimes I leave it out, and it's never around long enough to go bad.

Wife likes to keep it on the counter... until the dog eats it. He keeps this up, he may be the first yellow lab to die of a heart attack.
