butcher cutting block....

I just bought a butcher cutting block at chinatown. It's one of those cutting boards that is a 14 inch in diameter and about 4 inch thick in height (a cutting board for chopping with a bitcher knife). Even though it was shrink wrapped, the person told me that I should make sure to soak this thing in water for a whole day. Is this true? I was just thinking that a good rinse would suffice.

I assume it is made of wood? The problem with wood is that it soaks up liquids and can be a host for bacteria. Maybe soaking it would prevent it from soaking up the blood the first time you use it.

yeah, it is made of wood. That's a good point. I thought the saleswoman was telling me because I was looking at it as of it was dirty (and it kind of was).

I have a butchers block attached to a cart on wheels.
Yes you should soak it for 24 hours and let it throughly dry before using.
