I don't see any am3+ boards with more than 4 RAM slots. Is this going to change once Bulldozer is out?

Is AMD leaving Intel uncontested with 8 RAM slots using X79?

Don't say anything about 8 gig sticks because I am not going to buy an 8 gig stick when I can get eight 4 gig sticks for the same price...
 
You won't get 8 slots with dual channel setups. The X79 supports Quad Channel which is why you are seeing 8 slots. For AMD, you need a server setup to get anything like that
 
Why do you need more than 8gb (2x4) right now?

If you are doing really intensive stuff maybe you need more of a workstation where you would get more slots.
 
Starting from DDR4, you won't be able to put more than 1 DIMM on a channel so these 4 and 8 slot motherboards will have to become 2 and 4 slot motherboards when that happens
