building new comp for audio editing, should i get a workstation or desktop?

i want to build a pc for home use and i also do a lot of audio editing. i like to host my own webserver, mysql server, and sometimes game server. i dont play games all that often so graphics card is not my primary concern, i just want a fast powerful machine that can handle heavy audio editing and running some servers occassionally. i also like to use linux so good compatible hardware would be nice.

mainly, what advantages can i find if i go for a workstation pc?

desktop vs workstation
10k rpm sata raptors vs 15k rpm sas drives?
2gb pc2-8000 ddr2 vs 2gb pc2-5300 fb-dimms?
conroe e6300 2.13GHz vs xeon 5130 2.0GHz

need suggestions for which hardware i should get and answers to questions such as:

is 667MHz fb-dimm memory going to cause a big performance hit when compared to higher clocked desktop memory?

money is a concern but being able to load gigabytes of audio in my audio projects quickly is something i value too so should i satisfy myself with a couple of raptors or just go the extra mile and get a couple 15k serial attached scsi drives?

i know the xeon 5130 is based off the conroe design so there shouldn't be too much difference between it and the desktop conroe aside from more cache but will being able to purchase a 2nd cpu in a dual socket workstation class motherboard help a great deal in multi-core supported applications? most of my audio editing software supports multiple cpus.

antec titan 550 server case
xeon 5130 2.0GHz processor
tyan tempest i5000xt with serial attached scsi ports
2gb pc2-5300 fb-dimm
36gb 15k fujitsu hard drives x 2

desktop
antec p180 case
seasonic s12 series power supply (how much power would i need?)
conroe e6400 2.13GHz processor
dfi based nvidia 590 intel motherboard or ati conroe motherboard? (when either become available)
2gb pc2-8000 memory (what brand?)
36gb 10k raptor x 2

in either system i'll want
nvidia geforce 7300 gt (temporary graphics solution til i can afford something better)
firewire 800 card
108Mbps wireless card

any suggestions on what hardware i should put into this new system i want to build would be great!
