Building a network for CCTV

Hi guys,
I'm thinking of building my own CCTV at work to use around 8 to 12 cameras 1080p. Does anyone have some experience with this that could give me some tips? My main questions are

Should I be using 1000mb network cat6e?
Can you recommend a good PoE 16 port 1000mb switch?
What sort of Graphics card should I be putting in the PC?
I take it I just need a very large HDD? Should I have a separate SSD for the OS and software?
Do I just need a standard PC with a 1000mb Ethernet port or do I need a video capture card too?

Any help would be great.

Always.

Anything from a reputable brand should be fine. (Netgear, TP-LInk, etc.)

None. Any low-end CPU with an IGP will be fine.

Yes, or an array of several large HDDs. Also yes to the second question.

Nope, just a standard PC. IP cameras handle all that analog-to-digital business now by themselves, and are just sending images/video files to your computer. It's all very neat and tidy.
