Buffalo burger vs Hamburger

Fermi lab has an annual buffalo cookout. They ship one of the buffalo off and have it slaughtered and prepared, bring it back and grill all sorts of tasty treats!
 
There's a great place in SF for Buffalo Burgers. PM me if you're interested 🙂 Don't want to give away my secrets.
 
Just like beef, there's good bison and bad bison. Biggest problem is that people don't cook it correctly, cooking it the same way you would beef - since it's leaner, that often dries it out. Beef raised by 4-H kids as a special project > bison > beef from a good butcher >> beef from a grocery store.
 
I grilled buffalo burgers last weekend. Put them on side of the grill where the burner was off, went low and slow till they were about medium-medium well, and they turned out great. I couldn't believe how good they were.

Mmm...Teds - their bison burgers are to die for! Definintely not gamey or dry or stringy. Becuase of the lower fat content, I don't think it holds together as well as a regular burger patty, but it's still great nonetheless. Too bad they don't have any in Canada. I go to it serveral times every time I'm down in Denver! Their fries are good too! 🙂
