Bruschetta on wheat thins with Swiss cheese

When I worked for my last job (restaurant) I went in and made Bruschetta for like 3 1/2 hours..... sooooooooooooooo many tomatoes, I never thought chopping up tomatoes would make me want to shoot myself.

Yeah, unfortunately everything is freshly made at the restaurant..

Trader Joe's stuff is pretty fresh. I find even their frozen veggies to be much much better than the supermarket stuff.

it's MmMm good.

tomato, basil, olive oil, basalmic vinegar, salt, pepper, garlic. throw it on a french roll, top with cheese, bake till cheese melts.
