Brown stock vs. White stock (update!)

I don't. I just simmer the ingredients then use the meat for chicken salad. Although lately, I just buy stock from the gourmet store across the street. It's made fresh and is very good. Kind of expensive, but a real timesaver if I don't have any frozen stock.

I made a gallon of white stock.

I was too lazy to put it in a container so I stuck the entire stockpot in my freezer. I now have a one gallon cylindrical ice cube. crap.
