Broccoli stems

How much nutrients are in the stems verses the leafy part? I know broccoli is healthy, and I want to be healthy, but whole broccoli ain't exactly cheap, and the stems seem a good bit less expensive. Also, is there a preferred way to eat them so they don't taste nasty? Maybe put them in a broccoli/rice/cheese casserole?

Yes they are as nutritious as any part of broccoli really. Problem is how tough they are to eat.

The way I consume their nutrients is to juice the stalks in my Omega juicer. But that isn't really a cheaper option by any means.

You have strange produce.
Probably means the floret, but the leaves are edible too. They have a much stronger taste than kale, though.

OP: I chop the stalks into smaller pieces and saute them. I have also sliced them and slow cooked them with roasts. I don't peel them, like the link showed, so I either cook them a long time or cut into small pieces to reduce the toughness. They absorb spices and broth quite well, in my experience, and have a very neutral flavor without.

I had a coworker who would often go out of town and do a Costco run and bring tons of food here, he quit his job without any kind of notice and left everything here and he owed money to the store fund, so we just paid off his tab and took his stuff. (he never actually came back for it and it would have gone to waste) Managed to score a ridiculously HUGE bag of frozen broccoli, never seen one that big before. Probably good for a year as far as broccoli goes lol.

I tend to just steam broccoli and include it with whatever else I'm eating. I don't mind the taste of it though so it's palletable pretty much as is. For fresh broccoli it's nice to have with some kind of dip, though the dip probably negates the whole health aspect lol.

Just make sure you peel them, then cut them into small cubes. I really like them, maybe even more than the florets.

I usually just cube it and steam it right up with the florets. Note however I also like the flavor of broccoli all I add is a bit of salt, or some soy sauce.

I always do this. In fact, I was in the grocery store just the other day and wondering whether or not I should pick up some broccoli. So I called my doctor to make sure it was OK. He answered the phone from home and we had a short discussion, with him ultimately giving it the go ahead.
