I need to save more money and eat healthier at work. I probably eat out 80% of the time during the work week, and I need to cut down. When I do bring lunch, it's usually sandwiches, wraps, pasta, etc.

Any good ideas for simple, healthy, and delicious lunches for the work week?

That's what I usually bring. I usually make a bunch of food then freeze it in small containers to use throughout the week. Leftovers from dinner work really well too.

my downfall is not preparing my lunch the night before. i try to slap something together in the morning, but that usually leads to me just eating out that day.

Yup, if you try to make something the day of it's going to suck unless you get up early enough to cook.

what I used to do is make an extra chicken breast or whatever for dinner and start boxing those up and taking em to work, you'll save a shit load of money and be eating a lot healthier than you would if you ate out every day

Soup is good food (if you make it yourself)! The most important part of eating healthy and tasty food is understanding that you will have to spend additional time the night before to prepare it. There are no cheap tasty healthy foods you can buy ready to go!

I like to grill on Sunday afternoons when I have time, then I take the bbq chicken/pork/etc. and cut it up into servings. Put it in 4 or 5 ziplock bags, and you are good to go. I also get salad preparations (carrots/mushrooms/cucumbers/etc) and make 4 to 5 bags as well. Pick up a bunch of bananas or apples.

On Monday morning, I haul it to work in a plastic bag and I am set for the week. Takes about an hour on Sunday night and I dont have to think about it again.

I'm getting ready to get some stuff for lunches this week.

Going to get some pot roast and put it in the crock pot. When it's done, shred it and add BBQ sauce. Put it on wheat buns, toss in a yogurt and that'll do it.

I'll also do tuna salad, various pastas, leftover stuff, chicken noodle soup and toast, stuff like that.

Here's a delicious sandwich(not sure about healthy :p):

Corn beef,Pastrami,Swiss Cheese on rye bread, topped with deli mustard and Coleslaw.

Optionaly you can toast the bread, meat, and cheese, then top with mustard and slaw.

Also, check the frozen food section for those skillet meals.
Sometimes I'll hit up the seafood section, get some crab cakes(just need nuking in the microwave) that and a can of vegetables makes a quick lunch(nuke with the cakes).

Another quick meal:
1 DAK canned ham or package of ham cubes(1lb, check the meat section)
1 can of potatos
1 can of carrots or green beans

Put in a bowl nuke in microwave. Season with salt and pepper.

 I always remember after going to bed.
Slapped together lunches usually get eaten before lunch time, cause to make it, I skip breakfast.

Don't put the meat on the sandwich now. Prepack the meat into a tupperware container and take the bread with you to work. Heat up the meat and then toast the bread. Instant winner there. Plus you'll start being the envy of your co-workers.

I like to make Quiznos-like sandwiches at work, using sliced bread. My favorite to make is the turkey-bacon-guacamole sandwich.

I keep the whole-wheat sliced bread at work, either in my food drawer or the freezer. I'll bring deli turkey meat, guacamole, bacon, and mozzarella cheese from home. I'll heat up the microwave-type bacon for 30 seconds. It even sizzles and smells as if it were cooked in grease. I'll place the bacon on one slice of bread and cheese on top of that, then the turkey on another slice of bread. I'll stick both pieces in the toaster oven until the cheese melts and basically sticks the bacon to the bread. then I'll take both slices out, spread some guacamole, and have the equivalent Quiznos sandwich for <$2 compared to $8 for the real thing.

I can pretty much do the same sandwich for a week with the same items. The guacamole will turn a different color by the next week so I have to pretty much use it all during the week.

I used to bring lunch when I started working. but then, I just stop bringing it. If I am hungry, I got nuts (chestnut, pistachios, raisins, etc.) or cookies.

I bring some sort of gluten free dish, a yogurt cup, a clementine, and a bottle of water. Occasionally I'll bring chips or peanuts to snack on. Sometimes my main dish is a tv dinner, some times it's left over food from dinner last night, and sometimes it's a sandwich.

I eat out probably 1 time a week.

Do you manage to piss off all the people in line for nuking their lunches while you prepare a 10-minute meal? ;)

I took in lunches for the first 2 or 3 months of my last job. I didn't switch to going out for lunch, I just stopped eating lunch.

I gave up on making my own shit to lunch.

I figured its either 200 bucks/month for eating out versus spending 50bucks/month plus labor, not really all that much in the big picture.

I rather enjoy a good meal everyday much rather than spending it on entertainment, toys, etc.
