Replacing the fiance's brake pads and rotors next weekend. She currently has the original pads and rotors on her car, and she is hitting just about 50k miles now and the pads REALLY need replacing. Her car is a 2007 2.5 Jetta. She doesn't need anything fancy, and I would like to keep the parts under $220, if possible.

Any VW people out there with any brands they recommend for standard pad/rotor combinations?

Just go with the higher priced rotors and pads and torque to specs.
The cheap rotors tend to warp rather quick(brake pulsation).
OEM can be rather expensive-NAPA's top line should be fine.
If she is not a race car driver I would shy away from ceramic pads.
But then again maybe a VW person can chime in and better inform you.

Most rotors are about $50-75 each and pads run about $50-75 as well.

I believe in cheap rotors and good pads. I pick up Centric C-Tek off amazon in a heartbeat and do more research on pad. I did front/back pads and rear rotors on a CTS for about $140 in pads last week via advanceauto.

Thanks, I didn't check Amazon yet, but I will do so after work today and see what they have. I just wanted to steer clear of really cheap stuff...anything that anyone suggests you avoid (brands, etc.)?

Just as an FYI, before you take it apart, you're going to need a couple random tools for the job.

Take a look at this thread: http://forums.vwvortex.com/showthread.php?4234178

Correct, you'll need some triple square bits for sure. Not entirely positive on what else but Vortex should help for sure.

As for brands, ive basically only paid attention to the performance side so i cant help much there

If you hate brake dust like most people, go with Akebono pads, lowest dusting pad I have found and I have used most of them. The Akebonos are not cheap but are worth it for how little dust they create and Rockauto carries them.
