Question Bought a Win10 laptop for my mom. Strip down the bloat?

my mom has a 10yr old Win7 laptop that's out of hard drive space (60gigs).
was going to get her a 240gig ssd but she wanted a touch screen.

I bought an Intel Core 10th Generation i5-1035G1 quad core from Dell.

she uses it for email, web surfing, and light Word/Excel.

I have never used a Win10 machine before. :eek: (yeah, im a dinosaur.)
Should I use a bloat stripper?
if so, what should I *NOT* delete?

My last several Dells didn't have much in the way of bloatware installed.

I think the only thing I've had to uninstall was McAfee. Things like Dell SupportAssist I leave on the machine, and have it run every few months to check for driver/BIOS updates.
