I'm aware that - theoretically - I can use a bluetooth headset with my Macbook Pro. However, macs being macs, quite a lot of them probably won't actually work. Any tips?
That is like saying that certain wireless routers, or headphones, or USB mice won't work. I have only ever tried like 3 different BT headsets on a Mac, but one was moto, another plantronics and the third was some cheap no-name one. They all worked.
Besides if it doesn't work, just return it and get a different one.
Actually, some wireless routers won't work with mac. Or at least they didn't in 2003.
Also, I don't know jack about bluetooth headsets.
And although I have had crappy signal from wireless routers on my Macs (I'm looking at you linksys and belkin), I haven't ever had one straight up not work.
