Blueberry Pancakes! Yum!

Nothing today, but yesterday I made:

Cheese omelette using Egg Beaters south-western blend.
Potatoes O'Brien mixed with some southern hash browns.
Toast with a bit of light spread.
Bacon.
Light-n-Fluffy Pancakes with real maple syrup.

All of that juicy goodness topped off with a delicious glass of Simply Orange.

EDIT: No Pulp and not the calcium enriched version of Simply Orange. That calcium one is nasty tasting.

A true breakfast of champions! It sounds delicious. 🙂 I keep hearing great things about Simply Orange. I'll have to give it a try next time I buy orange juice.

Oh it was delicious, but that was actually my dinner of champions! 😀 I had a similar breakfast earlier but without the pancakes. Let me tell you though, I had a hard time choosing what maple syrup to get though... I wanted real maple syrup, but the carb count is literally double the fake stuff. The fake stuff though is higher in sodium, which for a person like me with high blood pressure running in my dad's side of the family (and that he died from heart related issues), more sodium is probably the worst part.

But yes, you should definitely check out Simply Orange. I also tend to get their Simply Lemonade as I believe it's on sale this week at Wal-Mart for $2.38 or something like that.

EDIT: Oh and I even have a special larger plate that I use for my breakfasts. It's meant to be a platter of sorts, but I found that omelettes tend to take up more room, so I wanted a bigger plate. I found it once at home and I've been using it ever since. I need to find paper plates like this as I'm way too lazy to wash plates 😛.

😀 A platter! They really should make platter-sized paper plates. It seems like an untapped market. 😛 And I think you'll need to take pictures of this gigantic omelette breakfast on its special huge plate sometime.

I think they do make them as I believe I saw them in Wal-Mart before. I've really been tempted to take pictures, but I would've been a bit embarrassed of my breakfast last night... I still haven't got used to the electric stove's settings and cooking pancakes in the pan. Last night they cooked too quick and didn't have that beautiful lightly tanned look to them but more of a charred look. I'm also unfortunately out of bacon. I'm also a bit tempted to try to cook bacon in the George Foreman grill to see how that turns out. The grill being rigged might make it a bit weird though and a bit hard, since I like my bacon a bit chewy.

Also, I will tell you, I've had a lot easier of a time cooking omelettes using this Egg Beater stuff. For some reason, I just had a ton of trouble flipping the omelettes before using standard eggs, so not only is the Egg Beaters a bit healthier, I also have an easier time cooking with it. It's not too pricey either, only like $2.30 for a carton of it ( which according to the package is equivalent to 14 eggs or something like that ).

Blueberry pancakes with REAL maple syrup.
 
I came up with this recipe about 10 years ago and my kids love it:

Home made blueberry syrup:

Boil 1 qt fresh blueberries in about 1/2-3/4 cup water (rolling boil).
Lower heat and simmer for 10-15 minutes
Stir in powdered sugar. Keep adding until it forms a thick syrup
Add 1/2-1 tsp lemon juice (to taste).

For my pancakes, I have a mixture of cinnamon, sugar, honey, vanilla, and nutmeg that I use. It's a secret formula so everyone that reads this must now kill themselves.

If you're going to make blueberry pancakes, make sure you use wild blueberries, not those giant over fertilized monstrosities they sell in a super market. The flavor of wild blueberries is so much better. When my family had a vacation house in NH, we'd go hiking up to a huge area of land formerly owned by tabletop (some pie company) and it was covered in wild blueberries. We'd make the hike lugging up colanders and tupperware and come back with pounds of fresh wild blueberries
