I went to Target this morning to buy a medium-sized package envelope and some bubble wrap. That is all I bought. The cashier looks at my items and then asks "Are you mailing a package to someone?"

Actually I think it was a nice gesture on her part. I always appreciate it when someone tries to reach out on a personal level when you are doing business with them, even if it is just a cashier.

Now I can understand being caught off guard because in todays society (especially in the lager cities) people just go about their business like drones barely acknowledging the presence of others.

Not really. If you would have given her a blank stare instead of being cordial yourself then you would have been an asshole. The fact that you did respond in a friendly manner means that you understood what she was doing and didn't go out of your way to make her uncomfortable even though she did catch you off guard.
