I know that in some cases precursors can be substrates, but can someone name an instance in which a precursor is not a substrate? Where do metabolites fit in, within all this?

When A --> Enzyme --> B , A is the precursor.

A substrate is jsut any molecule taht interacts w/ an enzyme or receptor

Metabolite usually deals w/ any molecule involved in the entire enzyme system related to growth. Kind of hard to define since i've never though of it...
