Planning a new system build.... Thinking of the best X38 board to buy, thought of Asus Maximus extreme, but a little more pricey than I would like...
So two models shortlisted...

1. ASUS P5E3 Premium/WiFi
or
2. Gigabyte GA-X38T-DQ6

Which is one do you recommend?

Also, does the P35 chipset offer only dual x8 mode for SLI rather than dual x16 for SLI in X38 chipset?

Also recommend a good ASUS or Gigabyte P35 board with DDR3....

None of them,

Pick a Supermicro C2SBX, use it for as long as you want, and resell it with a 3 year warranty at the same price you paid for it. With his two featured PCI-X slots, you can add an excellent dual channel LSI Logic with 15k hard drives on both channels. This will put you on the fast lane for a little while. Fill the rams according to the digestive system of your OS and put a fast CPU. Then...enjoy.

P35 in general offers x16+x4 for Crossfire not SLI.
X38 doesn't do SLI either (unless nVidia release drivers not locked to their chipsets).
