Best wireless channel to use?

I've got a small wireless network set up at home and signal strength is generally not an issue.

I've followed the Wireless Security Recommendations @ EZLAN and currently have my wireless router set to use channel 11. However, my network appears to be cutting out when I use an older wireless phone.

Given channel 6 is apparently the busiest, and 11 interferes with one of my phones, which of the other channels is recommended? Does it really matter?

I don't care about security, as my networks has already been secured.
 
Upgrade your wireless phone to 5.4 ghz or downgrade to 900 mhz. There is a issue with 2.4ghz phones and most access points.

I'v tried messing around with all different channel configuration and it helps maintain the connection a bit longer. But it will still cut out.
