Best way to partition 120 GB HDD?

I just bought a 120 GB Maxtor HDD, to add to my 40 GB HDD, my question is, should i partition it into, say.. 3 partitions of 40 gigs or should i just leave it as one big one, or what, i am looking for peak seek time, i want it as fast as possible, any suggestions? Thanks
