If you have good non-serrated, I use those for both prep and eating. Sharp knives are probably my top kitchen item to have. Makes everything go smooth and fast.
As a former butcher, i can attest that a sharp non-serrated will work better on a good piece of meat. If you get a piece with a lot of gristle and your knife isn't very sharp, serrated is your next best option.
