I want to host a dedicated server but don't want people to be able to access my home network if they're able to exploit something on the other computer. What's the best way to go about this? Buying multiple modems/routers, running vlan, or another way?

You have a router and you have connected your machines to it?
One of them is your putative server.

Does your router have an option to configure one or more ports as "DMZ"?

A typical consumer router has only two "interfaces". One show as the "WAN port". To the other has been connected to (4-port) switch and (optionally) WAP. Two networks: outside and home.

A better router has more than two interfaces so that it can route between more than two networks and you can set its firewall to control the traffic.

It is ot clear what your issue is,

Normal Networks behind a Router etc. are not accessible to everyone that want to.

If you want to make the server accessible to others, you can do something like this.

Out teh servr in frond and you home network bind the second Router.
