I highly doubt you can overclock in OSX except by flashing bios. If I were you I would make sure I get a card that has good OSX86 drivers available before any other considerations. I think nvidia's are better in this regard b/c Apple uses more nvidia than ATI iirc.
 
Just out of curiosity, what'll you be using this computer for? It sounds like OS X will be your main OS, in which case you probably aren't going to be gaming much. There's no need to spend money on a dedicated video card if you won't be making use of it.
