Right now I'm looking at getting the Sony KDS-60A2000

How would this be if I were to double it as a monitor for my home theater? picture quality looks great in person but I have no idea how it'd fare as a PC monitor

...or would LCD be better?

any help would be appreciated by those who have set up home theaters themselves for this purpose

The HTPC area would be a good place to start.

Right now I'm using a couple 1600x1200 LCD monitors and a 720p projector. Personally I like the very high resolution and small size that monitors provide while I have a large lower res screen for video (and to a lesser extent gaming since I don't do much of that anymore).

As for using a single device for both purposes, getting a 1080p display is certainly a good start. You should make an effort to confirm that whatever displays you are considering will accept a 1080p input from a computer as a source. There are some issues with that that vary by model.
