Best temperature reading programs for an AM2 X2

Since multi-cores and hardware has changed since the simple "download speedfan and you'll be fine", what is the best temperature reading program for an AM2 X2 processor?

I am running CoreTemp and Everest, both pick up the same temps on my cores. Where do these programs read the temperature from and whats their safe max regular load temperatures?

All this tcase and stuff confuses me and I cant find a good explanation on the Anandtech boards.
