Best software for taking advantage of multiple monitors?

So we finally got setup with multiple monitors at work. I have a 20" widescreen main LCD and a 17" 4:3 LCD. What programs should I be using to take advantage of the second monitor? Can anyone recommend a good program for adding a taskbar to the 2nd monitor?
