Question Best possible use of 2 PCie 3 NvMe M.2 drives for video editing workflow?

I am building a new budget system for Video editing & Image editing. Have selected the following.

MSI B450 GAMING PRO CARBON AC (MS-7B85)
AMD Ryzen 5 3600
Nvidia GTX 1660-Ti
2x Samsung 970 Evo Plus NVMe PCIe M.2 500GB
Seagate Barracuda 4TB (2016)
Corsair Vengeance RGB DDR4 3600 C18 2x8GB

How Can I make better use of 2 NVme slots so the editing process remains faster?
Option 1.
Drive 1 250gb partition M.2 for OS & another 200gb for scratch disk
Drive 2 500gb for current project files after 2 months when works is finished I move the data to long term storage.

Option 2

Drive 1 250gb M.2 only for OS
Drive 2 faster 1TB M.2 for project files & create 250gb partition for scratch disk.

For editing purpose which will be the better option or is there any other option to get the drive perform better?

Without knowing the actual sizes and complexity of your workflow, its hard to say. Option 2 is probably the best to keep the OS separate from work. That would allow you to throw the second NVMe drive in an external enclosure if you ever had to recover. I would also skip partitions as the drive will auto wear level regardless.

If you need raw NVMe performance, then look at a X570 motherboard and a PCIE 4 SSD. They are a little more, but the storage is reasonably priced.
