I thnk it's for legal purposes, can't really remember all the reasons.
But businesses like Amazon, Sears, CostCo, Pepsi, etc. would use Register/Network Solutions and not GoDaddy, NameCheap, etc.
The big reason is related to jjsole's question. If a domain name is important to you, say your business name, and you register it somewhere that goes belly up it could be a pain to regain control of your domain. If you register with an icann accredited registrar (netsol, register, pairnic, and quite a few others) you stand a chance of having icann help you out. Security practices can also be better with some registrars than others.
Why worry about keeping it private? Is it that big a deal if someone knows your address? If it really is register it to a business name/address, po box, etc.
