Best motherboard choice for a P3 800 ?

It depends what kind of processor you have.

For an FC-PGA packaged P3 800, I'd suggest something like the Asus TUSL2-C or the Abit ST6 (and ST6-Raid).

For a Slot 1 packaged P3 800, the Abit SH6 has recieved good reviews.

All the above boards only support up to 512mb of ram though. If you feel that you need to use more than 512mb of memory, then the Abit VH6T or Asus TUV4X (both Via Apollo Pro 133T chipsets for FC-PGA and FC-PGA2 processors) would be good options. For a Slot 1 option using more than 512mb of memory, something like an Abit VT6X4 or an Asus P3V4X would be good (if you can find one - they're quite old motherboards).

I stuck with Abit and Asus products because my experience with Abit and impressions from Asus owners tell me that they consistantly make good boards. I'm currently using an MSI motherboard (MSI 645 Ultra) and it has served me very well (though I have no idea of the quality of MSI's P3 based motherboards).
