Half-Life 2 and Far Cry: Instincts are probably two of the best looking games that I can think of off the top of my head.
 
I didnt think Phantom Dust looked that good, but it was a pretty cool game overall.

I'd have to say Ninja Gaiden is the best looking. HL2 and Far Cry are very nice as well, but after seeing them on PC first it just doesn't seem the same (obviously). NG has awesome graphics and just insane animations for the fighting.
 
Theres so many games that look killer I couldn't pick out the best looking one. But according to IGN DOA3 is rated 9.9 on graphics. The new Black game looks great and could be the best looking as far as realistic.
