Jimi Hendrix - Band of Gypsys, you'll get the single greatest guitar performance in "Machine Gun".

If you can find it, Jimi Hendrix - In the West is a nice collection of some of his finest performances, including his best live "Red House" and "Little Wing".

A couple of other older ones are:

Neil Young - Live Rust
Peter Frampton - Frampton Comes Alive

Neil Young and Crazy Horse - Weld is also really good, if you're into it.
I have a soft spot for Cheap Trick, so throw in Live at Budokan.

Bob Marley Live is good too.

Yoshimi vs The Pink Robots wasn't live, but The Flaming Lips are excellent live :) I would also suggest checking out the Eels. They have three superb (in my opinion) live albums that are not to be missed.

Also, if you are a fan of The Smashing Pumpkins at all, their live bootleg Turpentine Kisses is superb. It's from the Melloncollie and the Infinite Sadness era.

Allman Brothers band, live at Filmore East.
Old school, and still the best live recording ever done.
