I'd recommend looking at the "upgrade path" section of my sticky thread.

If you must get a full 5.1 (or higher) system all at once, check out

Onkyo is my standard starting point for HTIB sets.

It would be quite tight, but you may be able to get a 5.1 system from components as an alternative if you can get in on good deals or used equipment through craigslist etc.
