HP 315. This is a great camera for $300USD. I have had mine since last November and love it. It's 2.1 megapixel and can take a shot up to 1600x1200x24. It includes a very good flash, red eye reduction, USB interface with software, and an 8Mb standard compact flash memory card. It allows management of photos in the camera and can send photos directly to an HP printer via infrared transmitter (provided you printer has a receiver).

This is really a great camera for the money IMO.

How about the Fuji Finepix 1400? Staples has this one for $299 (before any coupons you might happen to find). That's the one that I have my eye on.

First of all I would suggest reading this Off Topic thread, Recommendations on Digital Camera.

Then read this review of the Fuji Finepix 1400 which includes sample pictures.

If you play your cards right you could get this camera for about

$299.98 Fuji Finepix 1400 at Staples.com
-$40 off $200 coupon
-price match against competitor
+competitor's overnight shipping costs
========================================================
$188

Use the extra savings to buy 64MB SmartMedia for $59 with free shipping.

Feature for feature you cannot beat the Fuji Finepix 1400, I love my $49 digital camera!

I haven't used the HP315 yet but the Olympus D-360L is rather nice deal. You might want to check it out if you have the time.

I have the Fuji Finepix 1400 also. Great camera! Lower resolution than the HP 315 but it has optical zoom.

How about the Olympus D-460Z? It's 1.3 Megapixels and has a 3x optical zoom. Check out this review from CNET. Out of 330 votes, 97% of the users gave it a thumbs up.
