Best completed book series?

What are the best completed series? I don't have the patience to wait on anymore books to come out. After I finish the Dark Tower series, I'm going to need something to move on to.
 
Dan Simmons - Hyperion
William Gibson - A lot of his books start to converge towards the more recent, not exactly a series.
Vernor Vinge - Realtime Saga, Deepness in the Sky / Fire Upon the Deep
Peter Hamilton - Mindstar series
Stepehenson - The Baroque Cycle

I'm currently salivating over Richard K Morgan's works, but they are by no means a completed series.
 
Discworld series - Terry Pratchett
Lensman - E.E. "Doc" Smith
Skylark - E.E. "Doc" Smith
Fafhrd and the Gray Mouser - Fritz Leiber
Memory, Sorrow, and Thorn - Tad Williams
Otherland series - Tad Williams

 
I don't read books that often, but the last series I read was awesome, it was "His Dark Materials" by Philip Pullman, it's a three book series.

Hamilton's Night's Dawn series as well.
 
"A Man of His Word" by Dave Duncan, his other series, "the swordsmen?"(can't remember the exact title) was pretty good too
"Dancing Gods" series " by Jack Chalker
"The Baker's Boy" - it's the first in a series, I just can't remember the name of the series - by J.V. Jones
"'Coramonde'" by Brian Daley
There's another series I liked, but I can't remember the name or author🙁 I'd like to reread it.
 
Robin Hobb - (all three of her series)
The Farseer trilogy
LIve ship traders
The Tawny Man

I also fondly remember the Dragonlance Legends by Weis and Hickman
