My Tbird 750 and Abit KT7raid combo came pre-configured at 10.5 clock and 100mhz/33mhz fsb/pci speed (with the memory set to fsb+pci speed).

In my old system, I was running a p3 550e at 792 because I set my fsb to 144mhz. So naturaly I have this reservation about building a new computer that is running at a slower fsb than my old computer.

Assuming that my Tbird 750 can't go any higher than 1050mhz, what is the best clock/fsb setting (i.e. 10.5x100, 8.5x124, 7.5x144) and why?

Just to let you know in advance, the KT133 chipset just doesn't go that fast. Most people seem to be able to get it only up to around 110MHz FSB. However, keep in mind that it is "DDR" so it is "200MHz". Also, you can set the memory to run at 133MHz.

Anyway, as for a "best" speed, all I can say is that individual mileage will vary. Try for you best config.

I really doubt you'll be able to get up to 144, let alone 124. I've never seen a K7 go above ~115fsb without extreme cooling, and even then it's slim you'll be able to get above 120. I can't even get my duron to go above 106, although it may be due to PCI overclocking (I've got crap components)
