Best breakfast casserole recipies

Love me some breakfast casseroles. The best I've had is Neely's Sausage and Leek casserole. Man, I miss them and their show. Take this and some tabasco halepeno sauce on the plate with a bloody marry and I'm in love.

My other favorite revolves around frozen hashbrowns which can be fundamental in a breakfast casserole.

1) Make bacon still chewy, save the grease
2) Cook onions in said grease
3) Add frozen hashbrowns along with your favorite shredded cheese to greased shallow casserole dish
4) Poor bacon, onions and grease over hashbrowns, mix
5) Bake at 375, make 6 indentations in the hashbrowns for eggs
After about 30 minutes crack some eggs into indentations and back into oven covered with your favorite cheese
It's done when its done

One of my favorites --

FARMER’S BREAKFAST:

¼ c. butter
2 c. hash browns
½ c. chopped onions
1 lb. sausage
½ c. chopped parsley
1 can Rotel
8 eggs
1 tsp salt
½ tsp pepper (seasoned)
2 t. Half and Half
½ c. shredded cheese


Cook meat and set aside. Melt butter in large skillet, add potatoes and onion. Cover, cook, stirring occasionally to brown evenly (about 10-20 minutes)

Add cooked meat, parsley, rotel (partially drained), reduce heat.

Beat eggs, ½ and ½, salt and pepper.

Pour egg mixture over meat and potatoes. Cover; cook until eggs are set. Sprinkle w/ cheese; cover until melted.
