Beef ribs vs. pork ribs?

I like both, but I find it difficult to get decent quality beef ribs... most times they don'y have much meat & what is there is dry.

I like putting a light rub on a rack of baby backs, baking in the oven (covered) and then finishing on the grill with a good BBQ sauce. You get the smoky and charred effect from the grill yet the meat falls right off the bone from baking them first. Damn, now I'm craving some BB's.

In a pinch you can rub them, wrap with plastic wrap and a little apple juice, put on a rack/shallow roasting pan with whatever liquid you choose (a little liquid smoke as well), bake at 225.

THEN finish on the grill.

Pork ribs are the best, however beef is good too. It's really hard to get complete beef ribs - all the local grocery stores cut out 'V' shaped chunks of meat in between the bones and leave a small bit. They don't take sauce too well but are pretty good after 3+ hours of cooking with a coating of salt + pepper.

although i do like a good beef short rib, when i want ribs, i want pork ribs.. damn.. those things are tasty
 
If I had to choose, beef. Ribs in general have too much fat on them for my taste - I'm very picky about the meat I eat, having very little fat or gristle.
 
Pork- tender and flavorful, especially slow smoked with a good rub. All the beef ribs I've had were like a really cheap steak or made me think of what mastodon might be like.

Not even buffalo ribs are 2 feet long.

I had beef ribs from a Cow, that was slaughtered the morning of the day we ate it, on the Farm in Colombia. The ribs were about 15" long.
 
If the rib meat doen't jump off the bone so that the smoked barbecue goodness can run to my mouth... the ribs suck.

That said... in 95% of cases, beef ribs suck.
