And unfortunately for most of you, you don't even know that it exists. Slow roasted an 8 pound sirloin roast today, until it was 130 degrees throughout. (Very pink, but not mooing, except for the outer 1/4".) Sliced it as thin as I could possibly get it. Piled the shaved slices at least an inch and a half thick on a kimmelweck roll, and smeared on some horseradish sauce. (Not that god-awful disgusting concoction with mayonnaise mixed in.)
