1 bottle liquid smoke
1/8 teaspoon MSG
1/8 up Worchester sauce
brown sugar to taste
itty bitty dab of garlic, seasoned salt, and pepper
red pepper seeds
4lb lean (Gotta be as lean as possible. Fat is what spoils jerkey) beef or venisen
Beat the piss out of it with a meat tenderizer mallet, and marinate in a 1 gal freezer Ziploc bag, kept in your fridge. 2 days minimum. Sprinkle with pepper seeds, dry it, and wha-la! My favorite.
