Beef Inside Skirt Steak from costco

I never saw this cut at Costco before but because of the way they do their inventory and the meat shortages they've been having different things. I picked up 5 lbs of Inside Skirt steak at about 3.99 a lb.. first, how do i cut it, and second, what do i use it for?

that is a very tough cut of meat. It needs to be prepped and cooked properly. I believe it is used in Tex-Mex cooking.

skirt steak is what Mexican restaurants use for Fajitas.

they are a tough cut, but can be very tasty if prepared correctly..

google Taco Cabana (local San Antonio taco chain) fajita marinade for good flavor.. uses pineapple juice and soy sauce.

a key thing to do is cut across the grain into smaller pieces when ready to eat.

$3.99 /lb for inside skirt is very cheap. That's actually a steal. I would've bought it all at that price.

Inside skirt is cheap tough meat. There's also outside skirt which is more tender and tastier but those are high price. Most of the outside skirt goes straight to restaurants so you will rarely see it at regular grocery stores. Outside skirt normally goes for like $10+ /lb.

You can treat skirt steak, flank steak, flap meat steak all the same. Grill it hot and fast and then slice it thinly against the grain when you serve it.

Here's flap meat steak I cooked couple weeks ago. You can do the same for inside skirt.

I use flank steak for my Taiwanese BBQ sauce stir fry with Chinese Kale served on white rice. Thinly sliced across grain.

Thanks for the great ideas. When i opened the pack up i found they were all cut into 2-3 lb portions.... i just cut them all in half and put them away. Looking forward to making some things w/ it.

If someone had asked me what skirt steak is, I can't say food is the first thing that comes to mind.

Skirt steak makes amazing fajitas. make sure you skin them if they aren't already. I only buy it when its on sale or on clearance and haven't seen it cheaper than 5 a pound since the early 90's. ( normal price )
