Basic NAS question

Is there a typical file system that most NAS's use, or are they a messy mix of 'open' choices such as ext3/4/whatever, popular yet proprietary choices such as exFAT/NTFS (latter seems unlikely, MS probably would want a cut), and unpopular and proprietary?

The main reason why I'm asking is that I was reading another thread about 'server or a NAS', and the first thought that sprang to mind was "can I read the data off the disks myself if the overall device fails?". I guess my focus is more aimed at the small NAS devices that house say four disks in and are practical choices for a home or small office network.
