The runner on 1st is thrown out at 2nd but the batter beats the throw to 1st.

Does it count as a single or fielder's choice?

If the runner on 2nd is safe but the batter is out at first, that's a fielders choice as well, not a sacrifice, correct?

Correct. It's only a sacrifice if you intentionally give yourself up to advance the runner. If the fielder can't make the play at 2nd and goes to first instead it's a regular out.
