Baseball: if the batter beats the double play

The runner on 1st is thrown out at 2nd but the batter beats the throw to 1st.

Does it count as a single or fielder's choice?

Fielders choice. Counts for his stats the same as an ordinary ground out.

If the runner on 2nd is safe but the batter is out at first, that's a fielders choice as well, not a sacrifice, correct?

Correct. It's only a sacrifice if you intentionally give yourself up to advance the runner. If the fielder can't make the play at 2nd and goes to first instead it's a regular out.
