Let's define better with age...

Better with age = the music produced during the second half of their career is better than the first half

I can think of quite a few that have improved, but I guess it depends which type of music you like. Avenged Sevenfold sticks out in my mind.

Trail of Dead has IMO, each new album has been better than the last. Such an underappreicted band. I'll try to think of some more.

There are quite a few that started out low, then peaked sort of in the middle of their careers, then trailed off to crappyland in the end.

I actually find it fun to listen to those old albums once in a while, you just can't go in expecting Pantera as you know and love them.

Edit: I should ad they would fall uner the "peaked half way" group, because Cowboys was definitely their best album.

A7X got a lot better as their albums progressed.

Personally I'd say Dream Theater got better to a point (their peak was definitely Metropolis Pt. 2 and SDOIT).

I'm not sure if the last album of Blink-182 counts as "age", but it was head and shoulders above everything else they put out musically.

That's all I can think of so far.
