baking question: condensed milk vs regular millk?

if the recipe calls for condensed milk, will it make a huge difference using regular milk?

just go out and buy some evaporated milk. it seems as if the ingredient list is calling for evaporated, NOT sweetened condensed milk. In America, if sugar is not added to the process, aka non-sweetened condensed milk, it is referred to as Evaporated Milk. If sugar was added before water was evaporated, then its referred to as Sweetened Condensed Milk. Which, imho, is an excellent ingredient in chocolate recipes. If you wanted a more sweet and creamy versus milk-chocolatey... um... chocolate... then I'd used sweetened condensed. evaporated will get it closer to milk chocolate, and regular milk would screw up the texture and flavor likely. just go to the store, buy a can of evaporated milk, and follow the recipe. you'll thank yourself.
so, in a word, yes. you can ruin the recipe if you used milk from your gallon jug versus using evaporated, as there is MUCH less water content.

Ok, well, if you want to know the basics on substitutions...

If you need regular milk, but have evaporated milk, you can typically substitute diluted (or sometimes undiluted) evaporated milk for the regular milk in a recipe.

If you need evaporated milk, but have regular milk, you usually cannot substitute regular milk in a recipe.

If you need sweetened condensed milk, but have regular milk, you are SOL. If you have evaporated milk, you can usually substitute it if you follow specific instructions involving sweetening it correctly. I assume that adding corn syrup would be a typical way to do it quickly.

So, no, if you are thinking of simply substituting regular milk for the condensed milk in the recipe, you will NOT succeed in making something remotely resembling what the recipe is supposed to make.

Go to the store and buy what you need.
