Bake vs Broil

Stupid Question:

What is the difference? When a recipe calls for you to broil something..what do you do? Anything past "putting it in the oven" is a foreign concept to me.
 
Your oven portion should have a special setting on the dial for broil. This will activate the heating element on the top of the oven, so the top of whatever you are making gets cooked really well 😛
 
With baking the heat comes from the bottom, with broiling it comes from the top. For example: when making some garlic bread, use broil so the butter melts and the top part becomes firm while leaving the insides nice and soft. However with a pizza, you want to bake so the crust cooks without turning the cheese into something that has the look and feel of burned plastic.

As my oven was built sometime in the late 70's early 80's, and came with the condo I purchased..as you can guess, I do not have the manual. 😛
 
Electric ovens have a heating element at the top of the cavity.

when the Broil option is activated, this comes on.
It cooks the food from the top down. Easy to sear meats.

For gas ovens, the burners are located at the bottom of the cavity.

There is a tray underneath that you can place the food on to broil it.

I have never seen a microwave oven able to broil.

I have a microwave/convection combo that can broil although I have a sneaking suspicion it's just convection cooking at 500 degrees instead of the 450 max on the "bake" setting, although I'm not entirely certain that broiling is heating from the top by definition, as opposed to just very high heat....



 
Actually, this is a very informative thread. I never knew the difference between the two, or what the different functions of the two were. I just go by the directions on the side of the box of whatever it is I'm cooking, I assume they should know how it should be cooked and for how long. 😀

WTF do you guys call cooking on a grill, stewing? 😕

EagleKeeper, got it closest, but many gas ovens do have the broiler up top, where it should be. It's used to sear the meat, similar to grilling, but from the top.

Nope, we if something was cooked on what you call a grill we would call it either barbecued or flame-grilled.

I have never seen if the past n decades any gas oven/stove that had a broiler at the top of the cavity.
It may exists in very high end units, however, I do not think that you can go to Sears/Home Depot or Lowes etc., to such an unit.

I'd call that baking.

I'd call cooking over an open flame, grilling.

I'd call cooking under an open flame, broiling.


Hmmm, our last gas oven had it up top, as does it's replacement. Either way, the flame is above what you're "broiling".
 
Most new ovens actually have a separate compartment for broiling, if you have a rather new oven (heck, even older ones have it) - the bottom "drawer" is the broiler.

In fact, in most cases a new oven even comes with broiling pans to get you started 🙂
