Are those for beef production or dairy though? I know a lot of dairy farmers in CA, and they are all Portuguese for some strange reason, but haven't heard of any beef farmers.

Yeah, the mere thought of what it must take to slaughter cattle in California is problematic for me. That's why they're mostly dairy cows that listen to soft rock and swing in hammocks while they're being milked.
That doesn't say a lot though. As it isn't broken down by state and percentage. California could easily be insignificant at number 4. If the top 3 comprise like 40%, and the 4th and 5th are only 10% combined, it still might be above 50%, but that of little meaning.
I too love it but when brisket starts getting $9+ per lb, I might as well just buy a ribeye steak. At least ribeye I can eat almost immediately; it just needs to be grilled. Brisket is costing alot of money and then on top of that, it needs a looong time to cook.
Better question: When will FILET steaks get cheaper? I always open up a menu and my jaw drops at their filet prices sometimes.

Live cattle (ones ready to be slaughtered) are still close to the 52-week price high.
A little glimmer of hope is that Feeder cattle (ones ready to be fattened and will one day be Live Cattle) are high, but not as high as they have been.
The 2012 drought combined with high feed costs caused farmers to dramatically reduce their herd size. That meant a lot less beef supply in 2013 and later. Even though that things are returning to normal, prices for beef will remain high for a couple more years. Cattle aren't just born ready to be slaughtered.
A wild guess on my part (I'm no cow expert, despite driving past thousands of them daily) is that prices will return to normal in about 1.5 to 2 years.

I used to be like that. Until I tried ribeye as an adult. I would never consider going back to Filet again.

I remember when I had a bit too much Soju in Seoul. I was out with a few friends and we all decided to get something to eat. We went to an all night pork eatery. They put a mound of pork in front of us. I've never seen so much pork! We ate for 3 hours straight!
Nothing but pork, lettuce beer, garlic, and Soju.

No don't get me wrong. That's already what I end up doing... is getting the rib eye.
But still, occasionally I wouldn't mind a filet... It's a different flavor. It's a different style. One is fatty. The other is the least fatty. Total apples to oranges, yet both are ridiculously delicious cuts.
But why the fuck is the filet so fucking much? Seems like price gouging sometimes.
Because ribeye steaks are cut from the rib steak and each cow carcass contains far more rib for a butcher to slice and sell than filet.

This is nonissue for most people unless you're involved in the industry. Given how cheap OP is, I doubt he eats ribeye steak more than once a month. One pound of ribeye or 12 pounds a year. You're talking the difference of $20-30 total for the whole year. He's probably saving more than that each time he pumps gas in his car with the falling gas prices. Ribeye steak is easy substitute. NY strip was $7-8 all year long at Costco. Again, peanuts unless he eats steak every night and cooks for family of 4 or more.
To me is the biggest surprise is the increase in the price of the boneless beef short ribs. It's now at $10/lb at Costco. It was $6/lb for the past couple of years. 7-8 years ago it was around $3.50/lb. I blame the fancy $10-20 burger hipsters for the rise in the beef short rib prices. I've switched to eating chuck roast because of these burger hipsters.

can't find anything that low. I'm pretty happy when I can buy a pound of commercial bacon @ $4. The good bacon from Trader Joe's runs $3.99/12-14oz.

What always gets me is the Surf N'Turf. All it is is steak and lobster, both of which could be bought for less than $25 at any given grocery store. Yet everywhere I go it's $50+.
